Ladies, put aside all those spring and summer fashion trends for right now... because not only is it getting warmer outside, but we are heating up the kitchen as well! I feel as though I am a procrastinator, but around this time of year, it's all hands on deck... swimsuit season is rapidly approaching and we all need to fit in that adorable little romper! While many people want to just be "skinny," I also want to be healthy... skinny just so happen to comes along with it!
Here are a few recipes that I have stumbled upon lately that don't sacrifice taste, and will have you looking oh-so-good for the beach!
How can you go wrong with stuffed peppers? These are my go to when looking for something simple and easy. Making them healthier doesn't take away taste or make them anymore difficult to make...
Instead of hamburger meat, try ground turkey. For veggies, sauté some portabella mushrooms, and onions and then add tomatoes! I usually put white rice in my stuffed peppers, but in the spirit of bikini season, quinoa is a great alternative. Top it all off with some tomato sauce, avocado, and whatever kind of cheese you want!
This has to be my favorite! I love trying new things to put in my stuffed chicken. Some of my healthier alternatives are spinach and ricotta with garlic and herb seasonings. Super quick and easy dinner served with a salad or asparagus for a tasty and healthy meal.
Fish is always a great option when wanting to eat healthier! My favorite fish is salmon and am always looking for amazing glazes, and various ways to cook my salmon. I recently stumbled across this amazing glazed recipe which consisted of honey, lemon juice, minced garlic, and ginger. For the perfect meal add some asparagus with olive oil and bake them both together for about 10-15 minutes.
